Happy Easter & A Healthy Creme Egg?

It’s Good Friday and I’ve got 4 sessions this morning and then I’m off until Tuesday which makes it a very good Friday indeed.

After work I’m going to swing around the trees for a couple of hours at Go Ape margam with my girlfriend and then we are off to check out the new steak restaurant in Swansea, Miller & Carter.

Got a nice Easter planned full of walks (weather permitting) and of course some good eating. I love cooking, especially when you have the time to do it.

So we’ve got a few recipes kept to one side to have a go at this weekend and as it’s Easter of course there’s a couple of naughty ones in there.

BUT nowhere near as bad as shop bought with all of the hidden nasties in them.

And we are going to give it a go this weekend.

Healthy Ice Creme Eggs!

Okay so for the filling:

– 240g frozen mango/peaches

– 1/4 cup milk of choice

– pinch of stevia or 1-2 tsp sugar

– Ice cream of choice – I’ve just discovered (but not tried) tesco do a ‘healthier’ ice cream called Halo Top which you could try

For the chocolate:

– 1/4 cup of cocoa or cacao powder

– 2 tbsp coconut oil

– 1 tbsp maple syrup/honey

Directions (off the website):

First, get out an egg-shaped mold (available at in the cake-decorating section of shops, or if you haven’t just a cup cake holder) and put it in the freezer to chill. To make the yolks, combine the first three ingredients in a high-powered blender and blend until completely smooth. Scoop out and freeze while you make the chocolate. Combine chocolate ingredients and stir to form a thin sauce, then take out the chilled mold and paint chocolate in a thin layer around the bottom and up the sides of each egg, using a small spoon. Freeze five minutes, then do another layer. Fill with the ice cream, then add a tiny scoop of the yellow filling to the middles.

How does that sound?
