Sorry It’s Late (Healthy Pancake Recipe)

Hey there,
I hate being late so I’m sorry I didn’t manage to get this email out yesterday it was a full day in work and I had to get a 10 mile run in in prep for next week’s Llanelli half marathon.
So what I have today is a recipe for some healthy protein packed pancakes.
I made a batch myself a couple of weeks ago and they’re delicious! These pancakes are a bit thicker, more your ‘American style’ ones.
Here goes, this quick and easy recipe made about 8 decent sized pancakes for me.
Ingredients:
– 2 scoops oat flour (just blitz up 4 tablespoons of oats in a nutritbullet/blender)
– 1 scoop whey protein powder (I used chocolate for a great taste)
– 25 ml milk
– 1 tsp cinnamon
– 1 large egg
– coconut oil to cook them in
Method:
– Mix all ingredients together in a large mixing bowl / alternatively mix together in a blender
– Heat a pan with some coconut oil/butter and cook your pancakes on a medium heat
– They take around 60-90s on each side
Serve with a handful of blueberries and a spoonful of full fat Greek yoghurt for a flipping great meal!
