We are now approaching Christmas and the final bit of 2018, I really hope you have had a great year and 2019 shall be an even better one.
I’m already excited and looking forward to the challenges I am setting myself for next year, plenty of new and exciting things in the pipeline which you’ll be finding out about.
I’m sure you’re flat out with getting stuff ready/drinking on your last day of work so I thought just a little bite size post today with a healthy recipe will be helpful going into the weekend.
It’s a recipe I used in the past, my girlfriend said if I made that on come dine with me she’d have given me an 8! So I’ll take that.
Nice and easy, nice and healthy and feels like a treat.
Fish & Chips (serves 2)
Directions
Fish
– Get a nice big juicy cod fillet. Dip both sides in milk, grind some oats in a blender (I used my nutribullet) and dip the cod both sides in the oats for the healthy batter
– Pop some coconut oil in the pan and fry for 10-15 mins – cook both sides
Chips
– Get two big sweet potatoes and chop into big wedges
– Drizzle with a little extra virgin olive oil and add salt, pepper, chilli powder, garlic and some mixed herbs
– Place in a preheated oven (gas mark 6) for 30-35 mins
Mushy Peas
– Boil peas in a pan for 3-4 mins
– Smash them up with a fork and mix in with a little spoon of Greek yoghurt
Give it a shot just for the halibut!
